Today, we’re introducing Sokensha’s "Specially Cultivated Japanese Nanko Umeboshi with Shiso"!
This umeboshi is crafted using traditional methods and a deep commitment to quality ingredients. The featured plums are specially cultivated Nanko ume grown with care in Japan. Each plum offers tender, plump flesh perfectly balanced with the refreshing aroma of shiso, delivering a nostalgic, comforting taste.
The salt used is sun-dried sea salt from Mexico and Australia, dissolved in Okinawan seawater and reduced in a flat kettle. Retaining the bittern in the salt brings out a mild, rounded flavor. The plums are carefully pickled with this salt and domestic shiso, then sun-dried slowly, allowing their natural umami and depth of flavor to shine without any artificial additives.
With a salt content of 16.5–18.5%, these umeboshi are slightly saltier, but also highly preservable, just like traditional umeboshi that go perfectly with rice. The plums range from large to medium in size, maintaining a natural appearance. Ideal for onigiri fillings, chazuke, or as a flavor accent in dishes.
