Today, we are introducing "Organic Sake Lees Tentaka"!
"Organic Sake Lees Tentaka" is packed with the blessings of organic rice. Produced by Tentaka Brewery, a long-established sake brewery in Tochigi Prefecture, this sake lees is created during the pressing process of their organic junmai sake. It is made from organically grown rice, cultivated without pesticides or chemical fertilizers, and pure water from Mount Nasu. The result is a rich and profound flavor that captures the essence of nature.
Because it is derived from rare organic junmai sake, it is available for only about a month, making it a special, limited-time product. The loosely crumbled texture makes it easy to use for amazake, kasujiru (sake lees soup), kasuzuke (sake lees pickles), or even baked goods. It contains approximately 10% alcohol, enhancing its deep umami and aroma.
Tentaka Brewery is located at the southern end of the lush Nasu Highlands, an area with a high percentage of sunny days and moderately cold winters, ideal for sake brewing. Dedicated to crafting sake from the ground up, the brewery established its own organic rice farm in 2018, pursuing a balance between deliciousness and safety. By cultivating organic rice with environmental consciousness, they continue to create sake that can be passed down to future generations.
