Today, we are introducing "Onomichi Garlic Miso" made with domestic organic soy sauce!
This miso features jumbo garlic grown in Mityo Town, Onomichi City, Hiroshima Prefecture. Compared to regular garlic, it has a milder aroma that doesn't linger, making it easy to enjoy every day. It is cultivated without chemical fertilizers or pesticides, using organic compost made by the producers themselves.
The garlic miso is made by slowly simmering domestic organic soy sauce, rice malt, unrefined sugar, mirin, and chili peppers, creating a deep umami flavor with a rich, savory taste. Its sweet and spicy seasoning with a slight kick makes it perfect as a rice topping and for use in various dishes.
Simply placing it on warm rice enhances its flavor, and spreading it on grilled rice balls brings out its delicious aroma. It also makes a fantastic addition to tamago-kake gohan (rice with raw egg).
